This is a really easy, simple pasta recipe. And, it's oh-so-tasty.

Ingredients
- 1 or 2 cans of whole tomatoes (depending on how much sauce you want)
- 1 medium onion (chopped)
- 5 cloves of garlic (minced)
- Any kind of bouillon -- I typically use the pasta bouillion, but any will suffice
- mixed soup vegetables -- in the Netherlands you can buy them in packages called 'soep groente', typically consisting of scallions, carrots, different herbs, celery
- 8-10 mushrooms - chopped
- 1 tbsp olive oil
- ~10 leaves of fresh basil (or 2 tbsp pesto)
- salt, pepper
- pasta of your choice
Instructions
1. Cook pasta according to directions on package.
2. In a seperate bowl mash the whole tomatoes together (I use a fork and knife) DO NOT DRAIN TOMATOES!
3. Heat a frying pan and add the onion. Brown a little and then add the garlic.
[Hint: Garlic browns a lot faster than onions]

4. Add the mushrooms and stir-fry for about a minute before adding the crushed tomato mixture.
5. Once the sauce is boiling, lower the fire and allow it to simmer for 3-5 minutes.
6. Add mixed vegetables, bouillon, salt and pepper (season according to taste) and continue to simmer for another 3-5 minutes.
7. Add the pesto/chopped fresh basil leaves and simmer for another minute (1) before turning off fire.
